    A diferencia de los coches y la electrónica, no hay tecnología ni fórmula secreta para hacer vino. Esta bebida fermentada de milenios de antigüedad es fundamentalmente un producto de la tierra donde crecen las uvas. Lo que diferencia al mejor vino del resto no es su patente tecnológica, sino una mezcla de agricultura, ciencia y arte.

    La idea de que el suelo de un viñedo es importante para la elaboración del vino se consolidó en la Edad Media, cuando, según cuenta la leyenda, los monjes de Borgoña cataban la tierra para ver cuál producía el mejor vino. Al fin y al cabo, las vides absorben agua del suelo y cabe suponer que, con ella, recibirán todos los demás nutrientes que necesitan para desarrollarse.
