New Zealand commits NZ$2.79 million to convert winery lees into soil amendment

New Zealand’s government said Thursday it will commit more than NZ$2.79 million to a program in the country’s main wine region aimed at turning winery lees, a byproduct of winemaking, into a soil amendment, with co-investors adding another NZ$4.19 million for total announced funding of more than NZ$6.98 million.

Agriculture Minister Todd McClay said the project will be led by the Bragato Research Institute and centered in Marlborough, which produces much of New Zealand’s wine and generates large volumes of lees each year. The material is the organic residue left after fermentation and wine processing. Officials said disposal options for that waste have become more limited and more expensive, creating pressure on wineries and local authorities to find another outlet.

Under the plan, lees collected from participating wineries in Marlborough will be blended with compost and biochar to produce what the government described as a safe, high-value soil amendment. The work is being supported through the Primary Sector Growth Fund, a government program that backs projects intended to lift productivity and create new commercial opportunities in the primary industries.

Based on the minimum figures released by the government, about 40% of the funding will come from the state and about 60% from industry and other participants. Officials presented the project as both a waste management effort and a commercial test, arguing that a product made from winery byproducts could reduce disposal costs while improving soil condition and lowering emissions tied to current handling methods.

McClay said the program is intended to provide the testing, monitoring, and system design needed to show whether the approach can work on a larger scale. If the model proves viable, he said, it could give councils and the wine industry enough confidence to back a permanent system that would eventually operate without ongoing public support.

The announcement reflects a broader effort by governments and food producers to find uses for agricultural waste that has traditionally been treated as a cost rather than a resource. In Marlborough, the issue has become more urgent because the region’s concentration of wineries produces a steady stream of organic residue that must be managed safely. A reuse model that works there could be relevant to other wine-producing areas in New Zealand, where similar byproducts are generated during harvest and processing.

The government did not release key operating details that would allow a fuller assessment of the project’s likely impact. It did not say how many tons of lees are expected to be collected, how much waste disposal spending wineries now face, how much emissions reduction might be achieved, or how much revenue the new soil product could generate if sold commercially. No timeline was provided for the demonstration phase, and officials did not say when results from the testing and monitoring work would be made public.

That leaves open several practical questions, including whether the collection and processing system can operate at a cost low enough to compete with existing disposal methods, whether there will be steady demand for the finished soil amendment, and how easily the model could be transferred to other regions with different scales of wine production and different waste logistics. The inclusion of biochar and compost also suggests the project will depend not only on winery participation but on a reliable supply chain for the other inputs needed to make the final product.

Even so, the funding decision signals that New Zealand sees enough potential in the approach to move from research into a demonstration stage. For Marlborough wineries, the project is meant to address a growing waste problem at the source by collecting lees and converting them into a product with agricultural use, rather than sending the material through increasingly constrained disposal channels.

The Bragato Research Institute is expected to work with participating wineries and other backers on the collection, treatment, and evaluation of the material. The government said the goal is to establish whether the process can deliver a durable solution for the region’s wine sector while opening a new value stream for growers and related businesses. Until the trial produces operating data, however, the long-term case for a permanent system will rest on whether the demonstration can show the process works at commercial scale.
