On March 18, the tequila brand Kypros participated in the exclusive Cenas Históricas organized by Food & Travel in Mexico City. The event brought together 50 guests for an evening that combined high-end cuisine with a historical narrative focused on the Spanish conquest of Mexico. The dinner took place in an intimate setting, designed to encourage conversation and reflection on the country’s past.
Kypros played a central role in two key moments of the menu. The evening began with a welcome cocktail called Isla Bonita, made with Kypros Reposado, coconut liqueur, pineapple, and thyme. This drink was intended to introduce guests to the tequila’s character—firm yet smooth, with a subtle aromatic profile. At the end of the meal, Kypros Añejo accompanied dessert, a mostachón de chapulín with banana brulée and homemade mole. The tequila was served neat, allowing its warm and persistent notes to complement the final course.
The dinner’s theme, “La Conquista de México,” was explored through both food and discussion. Historian and writer Pedro Fernández guided guests through stories about figures such as La Malinche, Moctezuma, and Hernán Cortés. His commentary aimed to provide a nuanced perspective on this period of Mexican history, encouraging guests to consider its complexities beyond traditional narratives.
The menu reflected a balance between tradition and innovation. Dishes included chicharrón de insectos with avocado and salsa molcajeteada, watermelon cured with mezcal and trout, and birria de diezmillo slow-cooked for eight hours. Each course was designed to build on the previous one, creating a progression of flavors that matched the evening’s historical journey.
Kypros emphasizes artisanal production methods rooted in respect for the land and tradition. The brand’s philosophy highlights harmony and balance rather than dominance of flavor. According to representatives at the event, this approach is meant to create a tequila that enhances rather than overwhelms culinary experiences.
The collaboration between Kypros and Food & Travel is part of a broader trend in Mexico’s gastronomic scene, where spirits producers are seeking partnerships with chefs and cultural organizations to create immersive dining experiences. These events aim to connect guests not only with food and drink but also with history and local identity.
Attendees described the evening as both educational and enjoyable, noting that the combination of storytelling, carefully prepared dishes, and thoughtfully paired tequila created a memorable experience. Organizers say they plan to continue hosting similar events throughout the year, each focusing on different aspects of Mexican culture and cuisine.
