Maison Bollinger, one of the most recognized Champagne houses in France, has begun celebrating its upcoming 200th anniversary by inaugurating a new winery in Aÿ, in the heart of the Champagne region. The house, founded in 1829, is known for its long history, high quality, and prestigious reputation. It was the first Champagne house to receive the Royal Warrant from the British Royal Family in 1884, officially becoming a supplier to the royal household. Bollinger is also famous for its association with the James Bond film franchise, a partnership that began in 1979 with “Moonraker” and continues to this day.
The new winery, described by Bollinger as one of the most significant transformations since its founding, marks the first step in a series of events leading up to the bicentennial celebrations planned for 2029. The facility is designed to blend into the landscape of Aÿ and respect the heritage of the house. The structure features cathedral-like architecture with floor-to-ceiling windows facing north to maximize natural light.
This new cellar is 40% larger than its predecessor and brings together all stages of Bollinger’s traditional wood vinification process under one roof. It can accommodate more than 5,000 oak barrels of 228 liters each, making it the largest wood vinification capacity in the Champagne region. The expansion allows Bollinger to continue its commitment to traditional methods while increasing efficiency and sustainability.
The winery uses advanced technology for heating and cooling, allowing precise control over maturation conditions according to the natural rhythms of the wines. A new steam-cleaning system for barrels has been introduced, significantly reducing water consumption during cleaning processes. These innovations reflect Bollinger’s focus on environmental responsibility and resource management.
Three new tasting areas have also been created within the facility. These spaces are intended to welcome wine enthusiasts and partners closer to where Bollinger’s wines are produced, right in the middle of the historic Vieilles Vignes Françaises vineyard. The company says this will strengthen the connection between production and sharing knowledge about Champagne.
The new cellar is dedicated to Gilles Descôtes, former Chef de Cave at Maison Bollinger, who passed away recently. The house paid tribute to his expertise and high standards, noting that his influence has left a lasting mark on Bollinger’s style and will continue to inspire future generations working in this new space.
With these developments, Maison Bollinger aims to honor its past while preparing for its future as it approaches two centuries of Champagne production. The inauguration of this new facility signals both a celebration of tradition and a commitment to innovation in one of France’s most storied wine regions.
