Champagne Taittinger unveils Polychrome restaurant and bar at historic Reims estate

Champagne Taittinger is set to open Polychrome, a new restaurant and bar experience at its historic Saint-Nicaise estate in Reims, France, on June 14, 2025. The launch comes as the Champagne house continues to expand its visitor offerings, aiming to attract both local guests and international travelers during the busy summer season.

Polychrome is designed to highlight the art of blending, a core value for Taittinger. The restaurant will offer guests an immersive experience that connects food and Champagne through a focus on sensory exploration. Each year, a different chef will be invited to interpret the concept of “polychromy,” which refers to the harmony of colors, textures, and influences. This approach is intended to keep the menu fresh and locally inspired while encouraging creativity from both chefs and diners.

For the first year, Michelin-starred chef Charles Coulombeau will lead the kitchen. Coulombeau is known for his modern style and international influences. He previously won the Taittinger International Signature Culinary Prize in 2020, an award that recognizes emerging talent in gastronomy. His debut menu at Polychrome will be presented in four chapters throughout 2025.

The opening of Polychrome also marks the first time all ten Taittinger Champagnes will be available in one location. Guests can expect rotating menus and curated tasting experiences called “palettes.” The restaurant will serve lunch from Thursday to Monday, offering three- and four-course menus priced at €65 ($70) and €80 ($85), not including drinks.

The Polychrome Bar will operate Monday through Saturday from 11:00 AM to 7:00 PM. It will feature all ten Taittinger cuvées by the glass, starting at €15 ($20). The bar will also offer afternoon tea service and seasonal tasting palettes.

The new restaurant is housed in an architectural addition designed by Giovanni Pace. The design preserves elements from the original 1930s building while drawing inspiration from the former Saint-Nicaise abbey on the property. Natural materials such as wood, stone, glass, and leather are used throughout the space. A newly built peristyle provides panoramic views of the surrounding park and serves as a focal point for visitors.

Inside, the Homeage agency led by Grégory Guillemain has created an intimate atmosphere with custom works by artist Sarah Walbaum and Simon Marq studios. The interior design aims to reflect Taittinger’s dedication to craftsmanship and balance.

Polychrome is part of a broader renovation at Champagne Taittinger’s visitor center. The estate now offers enhanced cellar tours, tastings, and other experiences under the Chromatique program. These updates are intended to give guests a deeper understanding of Taittinger’s history and winemaking philosophy.
