TimeSpirit, a new restaurant led by the Roca brothers, has opened at The Macallan distillery in Scotland. This venture marks the 200th anniversary of The Macallan, a renowned Scottish single malt whisky brand. The collaboration with the Roca brothers aims to create a permanent gastronomic experience at the distillery in Speyside. This project strengthens the relationship between The Macallan and the Roca brothers, celebrating the blend of tradition and innovation that both entities represent. The partnership is driven by a shared passion for excellence and a relentless pursuit of knowledge.

TimeSpirit offers a nine-course tasting menu in a unique and timeless setting. Located on The Macallan's 200-hectare estate by the River Spey, the restaurant accommodates only 24 guests per service. This ensures an intimate and unconventional dining experience. The space was designed by architect David Thulstrup, known for his work on the interior of Noma in Copenhagen, a three-Michelin-starred restaurant. The design aims to immerse guests in The Macallan's environment, with panoramic views of Speyside's rolling hills.

The menu pays homage to both Spain and Scotland, using seasonal local ingredients. These are sourced from the distillery's estate garden or local suppliers. The nine-course tasting menu can be paired with The Macallan whiskies and Valdespino sherries from Jerez de la Frontera. The culinary experience blends Scottish and Spanish influences, featuring appetizers inspired by The Macallan's "Distil Your World" series. Dishes include vegetarian haggis with whisky-spiced mayonnaise, cured mackerel with amontillado, pastrami with steamed brioche and sauerkraut, a radish and mango salad taco, and chicken pâté with raisins and apricot. Other offerings include The Macallan Barley, showcasing whisky ingredients, and From the Cask to the Chocolate, a whisky and chocolate treat with The Macallan Double Cask 12 Years Old. The menu will change seasonally, honoring the natural surroundings and craftsmanship of The Macallan.

The dining room features a contemporary design that complements the distillery, designed by Rogers Stirk Harbour + Partners. The kitchen is central to the dining experience, allowing guests to engage with the culinary process. The Macallan whisky is central to the restaurant, with exclusive expressions housed in a unique oak-paneled cellar. A selection of wines and sherries, curated by Josep Roca, is displayed against a backdrop inspired by Jerez's albariza soils. Natural light and views of Speyside's hills reflect The Macallan's values of respecting and sourcing from nature.

The Roca brothers express their excitement about the connection between El Celler de Can Roca and Scotland. TimeSpirit allows them to imagine their restaurant at the 60th parallel north. Their travels to Scotland and inspiration from old cookbooks have enabled them to pay tribute to Scottish cuisine. They have immersed themselves in Scotland's gastronomy, drawing from its history, culture, landscapes, and people. The Roca brothers have previously honored Scotland in their 2018 cookbook "Distilling Scotland" and a documentary on its cuisine, chefs, and products. They have explored Scotland, absorbing its spirit, and now wish to share their culinary creations through The Macallan. This collaboration celebrates The Macallan's bicentennial and distills its rich history through cuisine.

TimeSpirit promises to be a must-visit destination for those seeking a unique experience where gastronomy enhances the journey. The tasting menu is priced at £60 for lunch and £95 for dinner. TimeSpirit is open for lunch and dinner reservations from Thursday to Saturday, and for lunch on Sundays, until the end of April 2025. After this date, opening hours and days may change.
