In 2022, Château Pavie celebrates a significant milestone with its latest vintage, marking Gérard Perse's 25th harvest. Since acquiring the estate in 1998, Perse, with his family and dedicated team, has worked tirelessly to elevate Château Pavie, Hôtel de Pavie, and La Table de Pavie to the highest standards of excellence. His journey began in 1993 when he left a successful career in supermarkets to pursue his passion for wine. Captivated by the charm of Saint-Émilion, he purchased Château Monbousquet, which eventually led him to Château Pavie.
Château Pavie is one of the most prestigious wine estates in the Saint-Émilion region. It is known for its unique terroir, ideal for cultivating Merlot, Cabernet Franc, and Cabernet Sauvignon. The estate's favorable climate contributes to wines of exceptional depth and balance. Perse's vision for Château Pavie involved modernizing wine-growing practices while respecting the land. This approach has earned the estate the esteemed Premier Grand Cru Classé A status, a testament to its consistent quality and craftsmanship.
The wines of Château Pavie are celebrated worldwide, having received perfect scores from top critics multiple times. Each vintage reflects a balance between the terroir's identity, the year's climate, and the grapes' maturation. Despite recent climate challenges, the wines maintain remarkable purity and precision. The estate's terroir allows the vines to adapt, ensuring the wines' authenticity over time. Designed for aging, these wines develop complexity and grace over decades.
This year, Château Pavie introduces its 2022 Vintage, commemorating Perse's 25th harvest and the estate's 10th anniversary as a Premier Grand Cru Classé A. The bottle's design, in black and gold, symbolizes 25 years of dedication to this exceptional land. Perse hopes the 2022 Vintage will endure and convey the passion that has driven their creations for a quarter-century.
La Table de Pavie, the estate's restaurant, continues this journey of excellence. In 2020, renowned chef Yannick Alléno joined, bringing a fresh perspective to the dining experience. Executive Chef Sébastien Faramond highlights the culinary treasures of Aquitaine, creating dishes that harmonize with Château Pavie's wines. The restaurant quickly earned two Michelin stars, reflecting its outstanding gastronomic offerings. It has also received accolades from prestigious guides like La Liste and Gault&Millau.
The restaurant's team has been recognized for their expertise, with awards for young chefs and pastry chefs. La Table de Pavie is more than a restaurant; it's a destination where each dish tells the story of the terroir, enhanced by expert craftsmanship.
Hôtel de Pavie offers guests an inspiring retreat overlooking the medieval town and vineyards. Its location invites contemplation, with panoramic views that change with the seasons. The hotel combines refined design, bespoke service, and a warm atmosphere. The Maison du Village, renovated in 2024, features elegant furnishings and decor, reflecting the Perse family's commitment to excellence.
Staying at Hôtel de Pavie is an immersive experience, where every moment is crafted with care. The property embodies the family's dedication to excellence, offering a rejuvenating journey into a land that has inspired them for 25 years. Visitors can share in this exceptional experience, where passion for the terroir and a quest for perfection come together.
