The guide recommends Cabernet Sauvignon for meats, Carmenere for empanadas and Chardonnay for cheese-filled varieties

Casillero del Diablo, one of Chile's most recognized wine brands both nationally and internationally, has introduced a pairing guide designed to celebrate the country's Independence Day festivities in September. The proposal was developed by the winery's winemaker, Marcio Ramírez, with the goal of enhancing the flavors of traditional Chilean dishes served during these celebrations, from grilled meats to vegetarian options.

Ramírez explained that the right pairing not only elevates flavors but also strengthens the memory of family gatherings. For grilled red meats, Cabernet Sauvignon is the suggested choice. For stronger cuts such as ribeye or short ribs, the Reserva Privada line is recommended, while softer cuts like rump cap pair better with the lighter and fruitier Reserva label.

In the case of empanadas, the traditional beef-filled version is best matched with Carmenere Reserva Privada, which offers spiced notes and soft tannins, while the cheese empanada finds balance with Chardonnay. A choripán with pebre, the classic Chilean sausage sandwich with salsa, is again paired with Carmenere, which softens the spiciness.

Anticuchos, skewers of mixed meats and vegetables, are complemented by Merlot, bringing freshness and smoothness, while a plain choripán without pebre finds harmony with Malbec, whose acidity and sweetness balance the richness of the sausage.

The guide also includes vegetarian alternatives. Eggplant rolls with cream cheese pair well with Merlot, roasted peppers with egg are elevated by Carmenere, and skewers of mushrooms, zucchini, onion, and tofu are matched with the fruity and vibrant character of Malbec.
