Solos, a company specializing in no- and low-alcohol (NoLo) wine technology, is set to open a new facility in Hopland, California, in February 2026. This marks the first time Solos’ patented Aroma Recovery System (ARS) will be available to U.S. wine producers. The company’s expansion comes as global demand for NoLo wines continues to grow, with market projections estimating a value of $3.7 billion by 2030.
The new 9,000-square-foot plant is located in the Feliz Creek Wine Business Park, just off Highway 101. It features 1,700 square feet dedicated to office and client collaboration space. The facility is equipped with on-site tank storage and mobile bottling capabilities, offering an end-to-end solution for wineries interested in producing NoLo wines. The core of Solos’ process is the ARS technology, which uses solid-phase extraction to capture and reintroduce aroma molecules lost during dealcoholization. This approach aims to preserve the original aroma and taste profile of the wine, addressing a common challenge in the NoLo category.
Solos’ pilot plant in Hopland is already operational and allows producers to test and refine their wines before full-scale production. The main production line will use a Centec DeAlcoTec vacuum distillation column, known for removing alcohol at low temperatures while maintaining wine quality. The system can process up to 800 gallons per hour and has an annual capacity of four million gallons.
Matt Hughes, general manager of Solos Technology USA, Inc., said that the company’s technology represents a significant advancement for NoLo wines. “Our ability to sustain aroma and vinosity down to 0.0% empowers our partners to close quality gaps and bring varietal character, structure and quality back into focus,” Hughes said.
Solos has partnered exclusively with Rack & Riddle for sparkling wine production in the United States. Rack & Riddle is recognized as the country’s leading custom sparkling wine producer, with facilities across California. Under this partnership, Rack & Riddle will oversee product development and finishing for NoLo sparkling wines using Solos’ ARS technology.
The Hopland facility joins Solos’ network of plants already operating in Germany, Switzerland, Austria, Spain, and France. While the U.S. site will focus on wine production initially, Solos also offers aroma recovery solutions for beer and spirits internationally. The company expects to announce further developments in these areas in 2026.
Solos’ entry into the U.S. market comes at a time when consumer interest in premium NoLo beverages is rising. Wines priced at $15 or more are expected to account for $1.5 billion of the projected NoLo market by 2030, according to industry research cited by Solos.
The company’s U.S. arm, Solos Technology USA, Inc., is headquartered at the new Hopland location and aims to provide localized support and expertise for North American clients.
